| Notes: To Serve, place the lime yam mash neatly into the centre of the plate and lay the fish slightly to the side on the mash. Drizzle over a little of the curried onion cream and serve with a little lemon wedge. As cooked with King Goodwill Zwellethini. |

| Ingredients |

1.5kg (3lbs) sweet potatoes (approx 4) or Yams
15ml /1tblsp butter
75ml double cream
15ml /1tblsp fresh lime juice/lemon juice
1/4tsp ground ginger
1/2tsp salt
1/2tsp fresh ground black pepper

| Method |

1. Peel the potatoes and cut into equal squares
2. Place them into a saucepan, cover with water and cook simmering until cooked (approx 20mins)
3. Drain the potatoes and return to the heat and dry off
4. (Alternatively bake the potatoes until cooked and scoop out the flesh and place in a bowl)
5. Puree the potatoes by hand and add the butter, cream, ginger and seasoning
6. Finely add the lemon/ lime juice and mix well until smooth
7. Serve with the Natal trout.
