| Ingredients |

200g (7oz) tin of sweetcorn (or frozen) – drained thoroughly
2tsp ground cumin
1tsp ground coriander
2cloves garlic – crushed
1tsp salt
2 onions – finely sliced
3tblsp ghee (clarified butter)
6 red chillies – de-seeded and sliced
Zest and juice of ½ lemon
1 small bunch of fresh coriander |

| Method |

1. Heat a pan with ghee and the onions (do not brown)
2. Add the cumin, coriander, garlic and slat to a pestle and mortar and break down
3. Transfer to the pan and heat through with the onions – cook gently for 5-6mins
4. Add the sliced chillies and stir
5. Add the sweetcorn and stir for 2-3mins
6. Add the lemon zest and juice and the fresh coriander leaves and stir through, remove from the heat and season to taste.
