Hearty Beef & Orange Caserole |

| Ingredients |

Allow 250g/ 8oz of diced chuck steak per person
2 talbsp vegetable oil
2 tablsp corn flour
12 baby onions, peeled and left whole
10 fl oz/ ½ pint of robust red wine
Juice and zest of 2 oranges
2 carrots sliced thick and chunky
2 cloves of garlic cut in half lengthways
1 celery stick sliced
2 tomatoes
2 bay leaves
2 tsp fresh thyme

| Method |

1. Preheat the oven to 150c/300f/gas mark 2
2. Heat the oil in a pan or ovenproof casserole dish
3. Place the beef in a bowl, season with salt and pepper and dust lightly with the corn flour.
4. Place the beef carefully in the hot oil and brown gently all over.
5. Add the baby onions, followed by the remaining ingredients, including the red wine and orange juice. Stir gently
6. Cover with a tight fitting lid and place in the oven for 45 – 60 minutes.
