Alan’s Healthy Thai Chilli Beef

Notes: Around 200 calories, and 7.1g fat
400g beef fillet trimmed
2 small onions thinly sliced
2 cloves of garlic crushed
3 -4 fresh thai chillies finely sliced
2 tabslp soy sauce
2 tablsp oyster sauce
1 tsp fresh ground black pepper
3 cups of beef or vegetable stock
1. Cut the beef fillet in half lengthways, then cut against the meat grain, slices approx 3mm thick

2. Season the meat with the pepper

3. Heat one of the cups of stock in a wok and add the onion, garlic and chillies, simmer gently for 2 – 3 minutes, add a second cup of the sock.

4. Season the beef with the pepper and place into the stock

5. Stir gently for a further 2 – 3 minutes

6. Add the soy sauce, oyster sauce and the final cup of stock, bring to the simmer then serve with steamed rice.
