Strawberry Bavarian cream



Preparation Time: 15 mins approx
 
Notes: this recipe works well also with raspberries instead of strawberries
 
Ingredients:

 6 oz milk
240g (8oz0 of strawberries, pureed
6 egg yolks
100g (4oz) castor sugar
7 leaves of gelatine
500ml (17floz) whipped cream

 

 
Method:

Method

  1. Blend the egg yolks with the sugar

  2. Boil the milk and add it to the eggs

  3. Return the mix to the pan and heat gently  as if making custard.

  4. Remove from the heat when it starts to thicken and coats the back of the spoon.

  5. Soak the leaf gelatine in a little cold water to soften

  6. Drain, then add to the warm custard, stir well

  7. Add the strawberry puree, and cool off the mix quickly

  8. Once cold, fold in the whipped cream

  9. Place into chosen moulds and refrigerate until set and serve with strawberry coulis
