chestnut and Apricot stuffing

Ingredients:

Chestnut and Apricot Stuffing Serves 8 
2 tablsp olive oil
1 large onion finely chopped
2 celery sticks finely chopped
2 tsp chopped fresh rosemary
100g (4oz) chestnut mushrooms chopped
100g (4oz) dried apricots finely chopped
200g (8oz) vacuum pack of chestnuts chopped
50g (2oz) fresh white or brown breadcrumbs
1 egg beaten 
 
Method:

Method Heat the oil in a pan then fry the onion and celery for about 7 minutes, stirring occasionally, until softened. Stir in the rosemary and mushrooms and cook until the mushrooms are softened. Stir in the apricots and chestnuts and heat until the mixture start to cling together Remove from the heat, and stir in the crumbs, egg, salt and pepper.Leave to cool Stuff some into the turkeyWith wet hands, shape the rest into about eight balls and add to potatoes for the last 30 – 40 minutes of cooking
