Chilli Syrup

Ingredients:

250g (8oz) brown sugar
250ml (1/2pt) clear pineapple juice
10g cornflower or preferably arrowroot
2 red chilli peppers de-seeded and finely diced (Thai or Birdseye)
250g (8oz) diced pineapple
 
Method:

1. Place the brown sugar into a saucepan and add the juice, stirring and dissolving the sugar over a gentle heat

2. Add the chilli pepper and bring to the simmer

3. Cook gently for 4-5mins over a medium heat

4. Add the diced pineapple and bring back to the simmer

5. Mix the arrowroot or cornflower with a little cold water or pineapple juice and pour into the syrup

6. Bring to the simmer whilst stirring constantly. The mixture will thicken
