Plum Syrup

Ingredients:

170g (6oz) castor sugar
Juice and rind of 1 lemons
Juice and rind of 2 oranges
1 x vanilla pod cut in half lengthways or 2.5ml of vanilla essence
9 plums, ripe cut in quarters, skin intact.
 
Method:

1. Place the water and sugar in a pan with the vanilla pod, orange, lemon and plums and bring to the boil

2. Simmer the liquid for about 5/8mins until slightly reduced

3. Leave to cool
