Banana Mandazi



Preparation Time:
 
Notes: As cooked with King Goodwill Zwellethini
 
Ingredients:

1 large fresh free-range egg
 2 ripe bananas – coarsely chopped
 750ml/1 ¼ pints (2/3 cup) milk
5ml/ ½ tsp vanilla essence
500 ml self raising flour
5ml/1tsp baking powder
45ml/3tblsp castor sugar
1ml/ ¼ tsp ground allspice
 Veg oil for deep frying
 
Method:

1. Place the egg, banana, milk, vanilla essence, flour, baking powder and sugar in a blender or food processor
2. Process to make a smooth batter – it should have a creamy, pourable consistency (if it is too thick add a little extra milk) set aside for 10minutes
3. Heat the oil in a heavy saucepan or deep fat fryer and when it is hot carefully place spoonfuls of the mixture in the oil and fry for 3-4mins or until golden
 4. Remove with a slotted spoon and drain on paper towel
