Portugese Duck with Piri Piri Duck

Ingredients:

Ingredients for duck
 2 Barbary Duck Breasts
 2 garlic cloves, finely chopped
1 onion, finely diced
half lemon juice only
200g smoked ham, (cut into chunky cubes )
 60g Smoked Bacon.
90g chorizo sausage, thickly sliced
2 sprigs Fresh Thyme .
 1 Sprig Fresh Rosemary For the piri-piri bacon butter
 100g unsalted butter 2 cloves, ground 1 tsp grated orange zest 2 tbsp piri piri sauce ( please see recipe below)
100g finely diced Bacon ,( blanched in boiling water for 1 minute and drained thoroughly)
Ingredients for piri piri sauce
4 Red Chillies
1 lemon, juice only
 3 garlic cloves
1 tbsp smoked Paprika
4 tbsp Portugese Olive Oil
 1 tbsp Salt
 
Method:

Method for duck 1. Place the seasoned duck breast into a hot frying pan and sear on all sides, then add all the remaining ingredientds 2. Place the duck breast skin side up and add a little water to the pan and simmer slowly and gently for 4 -5 minutes. 3. Make the piri-piri butter by mixing all the ingredients for the butter together until a smooth paste consistency is reached. 4. When ready place the cooked rice into a casserol pan and cover with the duck , meats and juices from the pan . 5 Smear the duck with the piri-piri bacon butter. Cook in the oven for about 4 minutes until the duck is crisp .serve immediately. Method for piri piri sauce 1. Blend all the ingredients in a food processor to a smooth paste. 2. Heat a pan over medium heat and when hot add the paste and cook for 2-3 minutes over a high heat.
