Pork Fillet with Camembert Sauce and Garlicky Broad Beans

Ingredients:

Ingredients for pork fillet and Camembert sauce
 450 g Pork Fillet /Tenderloin
1 tblsp unsalted Butter
150ml Dry Cider
 200 ml Creme Fraiche
1 tsp Fresh Thyme
1 tsp Fresh Sage
1 tsp Fresh Marjoram
150 grm Camembert Cheese ( rind removed)
2 tsp Dijon Mustard Fresh Ground Black pepper Ingredients for garlicky broad beans
200g Broad Beans , shelled
 25g unsalted butter
50 g Bacon ( diced)
1 small onion (diced)
 3 cloves Garlic (crushed)
½ lemon, juice only freshly ground salt and pepper
 
Method:

Method for pork fillet and Camembert sauce 1. Slice the pork thinly approx 3/4 inch thick and batten out to 1/2 inch thick and season. 2. Melt the butter and fry the pork until cooked through 3. When ready, remove from the pan and keep warm. 4. Add the cider to the pan and bring to the simmer then add the herbs, creme fraich , mustard and cheese. 5. When ready coat the pork and serve with the beans. Method for garlicky broad beans 1. Bring a pan of water to the boil.. Add the beans , bacon and onion and cook for 3-4 minutes until just cooked and drain. 2. Return the beans to the pot and stir in the butter, garlic, and lemon juice Season with salt, pepper . Serve.
