Patatas Bravas

Ingredients:

1 small onion finely chopped
3 cloves of finely chopped garlic
1 tin of plum tomatoes
pinch of chilli powder
1 tablsp smoked paprika
coarse sea salt and freshly ground black pepper
750g potatoes cut into chunks
olive oil for frying
 
Method:

1. Heat a little oil in a pan and gently fry the onions and garlic until soft.

2. Drain the tomatoes, remove the core and as many seeds as possible and roughly chop

3. Add the chilli and paprika to the pan and cook briefly before adding the tomatoes, season and continue to cook gently until you have a thick, rich sauce

4. Heat enough oil to shallow fry the potato chunks, Fry until they are crisp and golden on all sides. Remove and drain on kitchen paper, sprinkle with salt and serve with sauce.
