Linguine with Walnut and Parsley oil

Ingredients:

120g walnuts [halves – shelled and ground coarsely] 


 120g Virgin olive oil


 2 cloves garlic [finely chopped] 


 6 fl oz water 


 2 tsp salt 


 450 g linguini pasta 


 120g Parmesan 


 ½ tsp freshly ground pepper


 ½ tsp coarse sea salt   


            

 
Method:

1]  In a large pan, heat together the coarsely ground nuts, olive oil, garlic and parsley and gently fry for approx 3 mins 


 2] Remove from the heat and keep aside 


 3] Cook the pasta in plenty of boiling salted water until ‘Al dente’ [approx 5-6 mins] stirring occasionally to prevent sticking. 


 4]  Drain the pasta and place into the pan containing the nuts and the oil and parsley 


5] Toss together, season and serve immediately and sprinkle with a little Parmesan cheese
