Simple creamy Mashed Potato scented with nutmeg

Ingredients:

900g floury potatoes  peeled and cut into 4


100g butter [unsalted] 


 120 ml  double cream 


 ¼ tsp freshly ground nutmeg 


 salt and pepper         

 
Method:

 1]  Boil the potatoes in salted water until tender…approx 16 - 20 mins…depending on size


 2]  Drain off all the water completely in the pan  and replace the lid  


 3]  Return the pan containing the potatoes back to a very low heat and shake the pan vigorously over heat for 2 mins [this will start to break the potato and remove any excess moisture, rendering the potato to become lighter and fluffier 


4]  Mash the potato [by hand] 


 5] Add the butter and cream a little at a time and finally, mash in the salt, pepper and nutmeg thoroughly beat and serve.
