1/Pre-heat the oven to 180dg
2/using the point of a small sharp knife insert it into the skin approx three quarters to the top of the apple and slit /score the skin only , then remove the apple core and centre of the apple.
3/In a bowl mix together butter,sultanas,dried fruit ,the peel,nuts and sugar and stuff the apple with this mixture, pressing in firmly.
4/Place the apples into an oven proof dish and drizzle over the honey and dust with nutmeg
5/ Pour the cider and brandy into the dishthen cover with foil.
Place into the pre-heated oven and cook for approx 20 mins
6/After 20 mins remove the foil , increase the oven temp to 200 dgrs and cook for a further 5 mins or until the apples are glazed.
7/ When ready serve the apples with the pan juices drizzled drizzlwd ovewr the top and a little lime or ginger cream....
Method for the cream
Place all the ingredients into a bowl and whisk gently until it forms a peak.
Keep refrigerated and serve when ready.
