Punjabi style Lamb Cutlets ( with step by step video)

Notes: Watch this dish being prepared

1.5  kg of French trimmed lamb cutlets

 4 cloves of garlic 

4 green chillies

1 tblsp of grated fresh ginger

1 tblsp of ground cumin

 2 tblsp of Macadamia nut oil 

 2 tblsp ghee/ clarified butter

2 medium onions finely diced

2 bay leaves

4 cloves 

1 cinnamon stick

1 cardamom pod

2 tsp of garam massala

1 tsp of ground nutmeg  

1 tsp of ground coriander

1 tsp of ground cumin 

 500g spinach, chopped fine and cooked

400g can of tomatoes

 60ml of tomato puree




  1. Place the garlic, ginger, cumin, chillies ,cardamom ,cloves and oil into a food processor and blitz until well pureed

  2. Spread the mixture all over the lamb ,add the cinnamon sticks and bay leaves ,cover an leave to marinate for  8 hours or preferably overnight.

  3. When ready ,heat the ghee or butter in a pan and add the onions, stirring until golden,

  4. Add the lamb and brown all over

  5. Place the spinach in a food processor with the tomatoes , Garam Massala and tomato puree and blitz until pureed

Add to the lamb mix and heat rapidly . Serve with the warm sweet n sour rice
