Pre-heat the oven to 180 dgrs
1/ Using an electric whisk, whisk together the sugar and eggs until pale and creamy
2/ Add the oil in a stream as you continualy whisk.
3/ Add the carrot, ginger,raisins,nutmeg and fold together with a spoon.
4/Siev together the Baking Powder and flour and add to the eggs mix , folding in gently taking care not to overmix.
The batter should be fairly free flowing in consistancy.
Place ( poor) into a non stick lightlyoiled loaf tin or a lined tin .
Place into the pre-heated oven for approx 40 mins
(Test using a skewer and cook until it comes out clean and clear).
Leave to cool for 5 mins then turn out onto a cooling wire.
