Belgian Waffles

Preparation Time: approx 12 mins
Notes: Please note that if you do not have a waffle pan and you cook them in a frying pan they will obviously not look like a traditional waffle and to prepare for an alternative presentation.


1 3/4 cups Self Raising flour
1 tablespoon Castor sugar
1 tablespoon baking powder
1/2 teaspoon salt
8 tablespoons unsalted butter (melted)
1 cup milk
1/2 cup sour cream
3 large eggs
Maple syrup for serving  
A waffle iron is recommended as it will give the distinctive waffle shape, but as few of us have these a very hot flat heavy based pan.


1/Lightly oil the grids of a waffle iron, or lightly oil a heavy based non stick frying pan.
2/Mix the flour, sugar, baking powder, and salt in a large bowl to combine and make a well in the center.
3/Whisk the melted butter, milk, sour cream, and eggs in a medium sized bowl until well combined and Whisk just until smooth; do not over mix.
4/Spoon about 1/4 cup of the batter into the center of each quadrant of the waffle iron and close the iron. Cook until the waffle is golden brown, 3 to 4 minutes. Alternatively pour the mix into the centre of a hot heavy based frying pan , cover and cook for approx 3 mins before turning over very carefully
.Serve the waffles hot, with the syrup

 or topped with fresh fruit
Serves: 12 x 4 inch waffles approx
