Flash Seared Tuna Cakes

Preparation Time:
Notes: Fantastic lunch or summer dinner. Fresh, fresh fish is so important….this dish is simply flashed and is close as you could get to warm Sushi

450g Tuna fish fillet [skinned and boned]
2 tblsp chopped capers 100g sesame seeds zest and juice of one lemon
2 tblsp extra virgin olive oil
4 tblsp peanut oil or corn oil
½ tsp cayenne pepper
2 tblsp soy sauce

1. finely chop, or coarsely blitz the fresh tuna fish and place in a clean bowl
2. add the cayenne, soy sauce, olive oil, lemon juice and zest and capers to the tuna and mix well
3. Divide the mix into 4 equal portions and form into a ball
4. Flatten the ball to form a cake
5. Heat the peanut or corn oil in a heavy based pan
6. roll the tuna into the sesame seeds until well coated
7. place the cakes into a hot pan and cook until golden brown on both sides
8. serve as desired
