Indonesian Salmon with Spicy peanut butter sauce (as seen on Bid TV)

For the fish
Serves 4 approx 
400g (1lb) Salmon fillets approx 100g (4oz) portions
1 clove of garlic crushed
1 tsp ground fennel seeds
1 tsp ground coriander
1 tsp ground cumin
1tsp fresh grated ginger
¼ tsp turmeric
½ tsp salt
2 tbles chopped fresh mint leaves
Roman Vianigre  

Spicy peanut butter sauce  
1 tablsp veg oil
2 tsp of grated fresh ginger root
1 tsp finely chopped garlic
¼ tsp ground turmeric
1 Onion ( chopped fine)
2 tablsp  peanut butter
1 tablsp fresh chilies
1 tsp fish sauce, nam pla
1 tablsp  lime juice
50ml (2floz) Ancient Greek Vinaigre
125ml (4fl oz) coconut milk 


Method With the exception of the fish ,place all the ingredients into a bowl, and add enough Roman Vinigre  to make a smooth marinade.
Place the fish into the mix, cover and leave for 15 minutes ( meanwhile, make the sauce) 
After 15 minutes, remove the Tuna from the marinade, drain off any excess, drizzle with oil and place on a hot griddle pan or over hot BBQ coals.
Cook rapidly for 1 – 2 minutes on each side, and take care  not to overcook.
Remove and serve with the peanut sauce

Heat the oil in a small pan and sauté  with the garlic shallots and ginger for around 5 minus or until softened.
Add the remaining ingredients and gently simmer for 10 – 15mintues, once at coating consistency, serve.
