Chocolate and Amaretti Torte

The average weight of an egg is approx 2 oz, of which 10% consists of shell, 60% of White and 30% yolk
 
Ingredients:

Chocolate and Amaretti Torte 

110g plain choc, chopped
2 tbsp amaretto liquer
110g unsalted butter, room temp
110g caster sugar, plus one tbsp
3 large eggs separated
60g, amaretti biscuits crushed
60g plain flour, sifted 
loose base sandwich tin 20cm diametered, buttered and base lined. 

Preheat oven to 180c/GM4 Melt Chocolate with the Amaretto in a bain marie, the minute its melted remove from heat and stir gently until cool. Beat together Butter and 110g Sugar in a large bowl until light and fluffy.  Add egg yolks one at a time, beating well before adding the next.Then stir in the cooled chocolate. when thoroughly blended used metal spoon to fold in crushedbiscuits and flour. Whisk egg whites to stiff peaks.  Whisk in the 1tbsp of sugar to make a glossy meringue, then foldinto the choclate mix in 3 batches. Transfer to prepared tin and bake for 30-35 minutes until just firm to touch. Leave cool in the tin for 10 mins.  Remove from tin and transfer to wire rack to cool. Serve slightly warm or at room temp with cream and berries.eat within 3 days, do not freeze
