Alan`s Apple Soufflé

Method:













For the apples, preheat the oven to 170C/350F/Gas 3.  

  1. Slice the base of the apples so they sit flat on a baking tray. Slice one-third off the top of each apple and cut the centre core and apple flesh out of the apple itself, producing an apple shell to use as a container in which to cook the soufflé ( alternatively use 4 buttered  soufflé dishes ) once done sprinkle with a little lemon juice to prevent browning and keep aside.

For the souffle

1/ Mix the Apple puree with the liqueur then mix in the cornflour and the egg yolk.
2/ In a clean bowl whisk the egg whites with the sugar until they are stiff but not dry. 3/ Fold the egg whites into the apple  puree, starting with just one spoonful and gradually adding the remainder.
4/ Spoon the soufflé mixture  into the apple shells ( or the soufflé dishes ). Bake in a pre heated oven at 180°C (350°F) Gas 4 for approx 9 - 12 mins or until well risen.

5/. When ready remove from the oven sprinkle with icing sugar just before serving.
