Summer coconut Yoghurt creams with seasonal berries

Summer coconut Yoghurt creams with seasonal berries


 Serves 4 

Ingredients

 350ml natural  yoghurt
150ml tin of coconut milk
40g castor sugar
4 leaves of gelatine soaked in cold water for 2 mins
100g strawberries cut into quarters or sliced
75g raspberries
75g blackcurrants
75g redcurrants for the syrup 
100g castor sugar
150ml water
1 stick of cinnamon
2 star anise
1 chilli pepper 

Method 1.Heat the coconut and sugar together stirring until the sugar has dissolved(do not boil)2. Add the gelatine, and stir until dissolved3. Remove from heat and cool4.When cold, beat the yoghurt into the chilled coconut mix and pour into glasses to set.Leave to cool for 4 – 6 hours or overnight in the refrigerator. For the syrup 

  1. Heat the sugar and water together with the cinnamon, star anise and chilli pepper stirring until the sugar has dissolved. then bring up to the boil

  2. boil for 3 mins to form a light syrup, leave to cool then strain into a bowl

  3. Add the fruit berries to the syrup and mix well

 To serve- spoon the mixed berries on top of the creams and serve
