Saville Orange Marmalade



Preparation Time: 20 mins, cooking time 2.5 hours
 
Notes: Skim off any scum during the boiling period
This will make clear marmalade free from any shreds.
 
Ingredients:

1.4 kg ( 3lb)  Saville Oranges
2.8 ltrs (5 pts)  Water
Juice of 2 lemons
2.7kg Sugar (6lb ) Castor Sugar

 
Method:

1/ Wash Fruit
2/Squeeze the out the juice and pips from the fruit then chop up the skin/rind
3/ Place juice and rind into a saucepan and bring slowly up to the boil cooking gently for two hours
4/ Add the sugar and lemon juice and stir until the sugar has dissolved
5/Bring to the boil and boil rapidly until setting point has been reached ( approx 30 mins) (test by spooning a little onto a plate , it will form a skin and set lightly.
6/cool slightly for 2 -3 mins then drain/ strain of all the pips and skin
7/ Pour into steralized pots and seal.
