Fried Banana fritters

  • 1 egg

  • 2 ripe bananas, coarsely chopped

  • 750ml Milk  

  • 1/2 tsp vanilla extract

  • 500ml self-raising flour

  • 1 tsp Baking Powder 

  • 3 tbsp caster sugar

  • 1/4 tsp ground allspice

  • vegetable oil for deep-frying

  •  

  • icing sugar for dusting

1. Place the egg, bananas, milk, vanilla extract, flour, baking powder and sugar in a blender or food processor. Whiz to make a smooth batter with a creamy, pourable consistency (if it is too thick add a little extra milk). Set aside for 10 minutes.

2. Heat the oil in a heavy saucepan or deep fat fryer and carefully fry spoonfuls of the mixture for 3-4 minutes until golden. Remove with a slotted spoon and drain on kitchen towel. Dust with icing sugar , alternatively  serve with grilled pineapple,a, fresh fruit puree  or for a treat coat with chocolate sauce ! delicious.
