Pan Haggerty Potatoes

Pan Haggerty Potatoes


 The name was originally one word – Panhaggerty – meaning, simply, onions and potatoes 

 450g potatoes [peeled]
50g unsalted butter
250g onions [peeled and finely chopped]
salt and pepper
1 tsp crushed caraway seeds
125g cheddar cheese [grated]
1 tblsp crème fraiche Method

Pre heat the oven to 180c, gas mark 4 1        Grate the potatoes…and place in a tea towel, squeeze out the starch until dry, do not wash2        Melt half the butter in a heavy based pan and the remaining half of the butter in a frying pan3        In the frying pan add the onion and sweat off until translucent4        In the heavy based pan add the potato and press together5        Pour over the cooked onion and seasoning6        Sprinkle over the grated cheese and caraway then place in an oven and cook for around 18 - 20 mins
