Fermiere Potatoes

Fermiere Potatoes


 Ingredients:

60g Butter
150g Smoked belly thinly sliced (rindless)
1.2kg Potatoes (sliced in rounds at approx eighth of an inch thick)
100g Grated Gruyere Cheese
1tsp fresh Thyme
1 clove Garlic (crushed)
1tsp fresh Parsley (chopped fine)
Black Pepper 

 
Method:

  1. Brush  a cast iron pan with butter.

  2. Cover the bottom and sides with sliced smoked belly of pork, overlapping the sides of the pan.

  3. Layer the potatoes and Gruyere in the pan, seasoning each layer (pepper only).

  4. Sprinkle each layer with a small knob of butter. Once completed fold over the bacon to seal in the cheese and potatoes.

  5. Cover with foil, and place into a pre-heated oven at 220C/420F/Gas mark 7. Cook for an hour.

  6. Take the pan out of the oven, leave to cool slightly and press down the ingredients with a slotted spoon.

  7. Remove form the pan and serve .
