Festive Fruit Loaf

Preparation Time: 20 min

800g (1 lb 12oz) self-raising flour

1 tbsp baking powder
½ tsp salt30g (1oz )granulated sugar
120g (4oz) glace cherries chopped
120g (4oz) dried apricots chopped
120g (4oz) dried mango/dates or pineapple, chopped
120g (4oz) mixed peel chopped
120g (4oz) walnut pieces
1 fresh egg
60ml (2 ¼ fl oz) vegetable oil
250ml  (9 fl oz) milk
3 tbsp rum, brandy or whisky
1 tsp almond extract Butter for greasing


Pre heat oven to 180c/350f/Gas mark 4
Butter a 2lb  loaf tin or line with quality non-stick parchment
Place all the dry ingredients into a large bowl and mix well.
Place all the liquid ingredients into a separate bowl and beat thoroughly until well mixed.
Pour the liquids over the dry and stir quickly and thoroughly.
Pour the mixture into the prepared loaf tin and tap the tin gently to ensure the mix is even
Place in the oven and cook for 40 – 55 minutes
Test the loaf – its ready when a thin knife/skewer inserted into the centre comes out clean.Leave to cool before turning out.
