1. cut through the skin around the centre of the apples and place them into an ovenproof dish.
2. add the brown sugar and 6 tblsp of the ale, cover and bake for 25-30 mins or until tender.
3. removethe apples from the bowl and keep aside.
4. add the remaining ale, sherry and place on to heat.
add the spices and simmer for 5 mins.
5. return the apples and serve.
