Indian Mango fool

Indian Mango Fool  

  
  Serves 4 
Ingredients

2 ripe mangoes (skinned and stone removed)
Juice and zest of 1 lime
1 tablsp castor sugar
2fl oz/50ml double cream
9fl oz/250ml natural yoghurt
1 tsp rosewater (optional)
Hazelnuts or Green Pistachio nuts to decorate 

Method 

  1. Cut the mangoes in half and scoop out flesh with a spoon

  2. Dice the mango and place into a bowl

  3. Add the lime juice, zest and castor sugar to the mango

  4. In a separate bowl whisk the cream and add the yoghurt

  5. Add the rosewater and whisk

  6. Fold in the mango

  7. Spoon into glasses, decorate with hazelnuts or green pistachios

 Serve with a sprig of mint
