Chilli Bannana Salad

Chilli Banana Salad

Prep time 5 mins
Cooking time 3 mins
Refrigerate 1 ½ hours Ingredients 
3 Bananas green unripe
1 onion finely sliced
½ mug olive oil
½ mug Coxon`s Roman Vinaigre
½ mug corn oil or peanut oil
2 green chilli peppers
1 tsp sea salt
1 tabsp caraway seeds
48 grapes 
 
Method:


  1. Place the bananas in a little water and poach until tender for about 3 mins only

  2. Cool slightly and slice

  3. Place the bananas in a bowl and add the finely sliced onion

  4. Mix together the remaining ingredients and pour over the banana and mix gently

  5. Cover and place in the refrigerator for 1 ½  hours to infuse

  6. When ready to serve, drain off any liquid and arrange on a plate

  7. Serve cold with Cajun spiced chicken
