Nockerln with Cherry Schnapps

Ingredients:

serves 4 - 6
Ing for the Nockerln
 2 tblsp butter
6 eggs fresh free range  (separated)
65 g flour
75 g Castor sugar
50 g Icing sugar
200 ml cream for serving
An oval oven proof dish 33 cm ( 13 inch) is required. 

Hot Cherry Schnapps

75ml Cherry Schnapps
75 ml Brandy
50g Castor sugar
1 small cinnamon stick
1 tsp cornflour
250g pitted fresh cherries 

Method
Heat the sugar in the pan and add the cherries.Add the brandy and flame .Add the cinnamon stick and the cherry schnapps and bring to the simmer.Dissolve the cornflour and add to the pan stirring until it thickens slightly.
 
Method:

Method
1/ Whisk the egg whites to a snow and trickle in the sugar to form meringue.
2/remove a spoon of the whisked egg and mix with the egg yolks
3/ Add the flour and fold in , add this mix to the remaining whisked egg whites and fold gently
4/Butter the oven proof dish and pour in the Schnapps casserole
5/ Dollop the Nockerln on top and place into a pre heated oven .
6/ cook for 4 mins at 220 dgc

For the Hot Cherry Schnapps
Method
