Fresh mussels with Tomato & Basil

Preparation Time: 5 mins
Notes: can be used as a starter or main course

Fresh, light and healthier lunch Serves 4 

2 kg fresh mussels  [scrubbed and de-bearded]
1 small bunch of fresh basil
2 cloves garlic [crushed]
300ml dry white South African
30 ml Olive oil
4 shallots finely sliced
560g [approx 5] med-sized vine ripened tomatoes or 1 jar passata
1 tblsp Coxon`s Roman vinaigre
Fresh ground black pepper
Fresh basil for scattering .. 


1)Heat the olive oil in a large open pan
2]  Add the onion, followed by the garlic and cook slowly and gently for 2-3 mins…taking care not to brown
3]  Add the white wine and bring to the boil
4]  Add the mussels, cover and cook for 3-4 mins, stirring occasionally until they have opened.
5] Remove the mussels and keep warm
6] Very quickly add the tomatoes, vinegar and pepper and bring to the simmer
7] Return the mussels to the pan and stir into the
8] Place into serving bowls and scatter with fresh torn basil leaves..Serve immediately
