Quick and easy Pumpkin Pie

Ingredients:

425 g cooked pumpkin
1 fresh free range egg + 1 egg yolk
1 dessert spoon treacle
50 gr soft Brown sugar
1/2 tsp ground cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1/4 tsp ground cloves
1/4 tsp ground ginger
142 ml double cream

230 g Either home made or ready prepared shortcrust pastry rolled and line a 10 inch pastry case/ flan case ( pre-cook / baked blind )
 
Method:

Method
1/ preheat the oven to 200 c gas mark 6.
2/ In a large bowl whisk together the egg and egg yolk  
3/Place the cream into a saucepan and add the sugar , treacle and spices and mix gently over a medium heat until the sugar has dissolved.
4/Place the cooked pumpkin into a food processor and blitz to a puree and blend with the egg .
5/ add the warm cream sugar and spice mix to the egg and pumpkin and whisk well.
6/Pour into the pre-cooked pastry case and place onto a tray and into the oven .
Turn the heat down to 180 dgr gas mark 4 and cook for 45 -50 mins or until the centre of the pudding has set.
When ready remove from the oven  and place on a cooling wire .
