Ingredients:

Ham wrapped asparagus with ancient greek vinaigre Ingredients:
1 bunch asparagus1 pack of sliced cured ham (Parma/Serrano)
olive oil
ancient greek vinaigre 
 
Method:

Method:Prepare the asparagus snapping off the woody ends and peeling any stringy skin from the bottom end. Cook for 2-3 minutes in a pan of boiling salted water and then lift out and place into a bowl of iced water to hold the colour and stop the cooking process. Once cool pat dry and wrap each stalk in a slice of ham and coat them in olive oil and season well with salt and pepper. Heat a flat griddle or large frying pan and when hot place the wrapped asparagus into it, when cooked on all sides drizzle vinegar over generously and allow to reduce until sticky coating the asparagus ,remove and serve with an herb salad and poached duck egg.
