Plum Clafoutis with Lavender Cream

 Ingredients:

4 oz ( 120g) Unsalted butter
350g (¾lb) ripe Plums ( stoned and chopped)
120g (4 oz) Self raising flour
2 Eggs
2tblsp Vanilla Sugar
300ml (½pt) Milk
1tblsp Brandy

 Method:Pre-heat an oven to 190c /375f /gas mark 5 



  1. In a clean bowl, beat  the eggs well and then add and beat in the flour.

  2. Add the sugar, milk and Brandy and beat to create a smooth lump free batter .

  3. Generously butter a shallow baking dish, approx 18 x 25cm (7x10in) and place in to a moderately hot oven 190C/375F/Gas Mark 5 for 5 minutes .

  4. When the dish is hot, remove and scatter the base with a layer of  chopped plums . then immediately pour over the  batter.

  5. Return quickly to the oven and bake for between 30-40 mins, until Clafoutis has risen and set.

  6. When ready sprinkle with a little icing sugar and serve  with Lavender cream .

To make the lavender cream 
2 tblsp fresh garden lavender
250 ml Whipping cream
120 grms castor sugar 

Method Place the lavender heads and castor sugar into a food processor and blitz for a minute, until the lavender has been well blended Pass the lavender sugar through a sieve to remove any large particles.Place the lavender sugar into a clean bowl with the cream and whisk until light and holding a peak
Serve a dollop with the warm clafoutis and enjoy !
