Cherry wine soup

Serves 4 

1 x 680 bottle or tin or Morello cherries (juice drained off) or 500gs of fresh stoned cherries
2 tbs maraschino cherry liquor
100g caster sugar
200ml orange juice
150ml red wine
100ml water
1 cinnamon stick
3 star anise
½ lime juice and zest 

 

 
Method:


  1. In a heavy based sauce pan, heat the wine and sugar, stirring gently until dissolved

  2. Add all the remaining ingredients and bring to the simmer

  3. Cook gently for 6 – 8 minutes until all the cherries are softened then leave aside to cool

  4. Remove the cinnamon stick and the 3 star anise

  5. Blitz with a hand held blender or a food processor

  6. Chill or serve slightly warm
