Cucumber and Mint Raita

150g (1medium) cucumber
1 tsp ghee
¼ tsp cumin seeds
1/4tsp black mustard seeds
½ tsp ground cumin
250ml natural yoghurt
2 tlbsp chopped fresh mint leaves
1 tblsp lemon juice
1 clove garlic, crushed
¼ tsp cayenne pepper 

Method 



  1. Peel the cucumber and half lengthways – discard the seeds

  2. Chop the cucumber coarsely

  3. Heat the ghee in a small pan and cook the seeds and cumin stirring thoroughly

  4. Combine the spice mix with cucumber and remaining ingredients in a small bowl

  5. Cover and refrigerate for at least 2 hours.
