Mulled Fruit Salad with Ricotta Dumplings(cooked with South African football legend Jomo Sonno )

Preparation Time: 20 mins

 Serves 4 
For the Mulled fruit
 2 eating apples [cored and cut into 6]2 oranges [peeled and cut into 2]
1 pear [cored and cut into 6]
1 small pineapple [peeled, cored and dived into 6 wedges]
zest and juice of 1 lemon
600 ml red wine
60g sugar
1 stick cinnamon
6 cloves
2 tblsp brandy
60g butter
60g icing sugar .      


1]  dissolve the sugar and butter in a hot oven friendly pan or roasting tray until almost amber in colour 
2]  dust the fruits with the icing sugar and place in the hot pan ….colour slightly 
3]  carefully pour over the wine, followed by all the remaining ingredients 
4]  place into a hot oven at 180 C for around 20 mins 
5]  when ready scoop and spoon the fruit and liquid onto the plates or serving bowls, add the dumplings, and pour over the cream  

For the Ricotta dumplings 
150g bread, cut into very small cubes
200g Ricotta
50g castor sugarpinch of salt
125g butter [melted]
6tblsp double cream
½ tsp cinnamon
3 medium fresh free range eggs
150 g flour 

1]  blend the small diced bread cubes with the ricotta 2]  add the sugar, cinnamon, salt and melted butter 3]  stir in the cream with the eggs then combine with the ricotta mix 
4]  finally fold in the flour 
5]  leave to rest for 10mins, then form into dumplings 
6]  heat a pan of water until simmering and place the dumplings carefully into the simmering water
 7]  cook for approx 12 mins, but do not allow the water to boil 
8]  drain,  then serve immediately  on top of the mulled fruits….drizzled with fresh cream or  healthy natural yoghurt
